Buenos Aires’ craziest Passover menu

Chef Tomás Kalika’s Rotisería Mishiguene will offer a special selection of Jewish cuisine to celebrate the holiday

Ten years ago, chef Tomás Kalika went mishiguene — the Hebrew word for crazy.

When his first restaurant in Palermo Hollywood didn’t work out, Kalika decided to trust his origins — he learned to cook while living in a Kibbutz — and focus on Jewish cuisine with a fine dining twist. 

The result was Mishiguene, a restaurant that became a Buenos Aires must thanks to its Middle Eastern-influenced cooking. Its trademark pastrami on the bone with potato latkes still reigns, with patrons from all over the world making advance bookings for both a table and that specific dish. The upscale Palermo restaurant has been on the list of Latin America’s 50 Best Restaurants for seven consecutive years. 

Mishiguene earned a Michelin guide recommendation in 2024, and sprouted Café Mishiguene, a separate venue on Cabello street.

That year, Kalika opened Rotisería Mishiguene in Belgrano, a family-friendly restaurant with the same menu. Almost all dishes can be ordered to take out.

Honoring its inspiration, Rotisería Mishiguene will offer a special Passover takeaway menu:  order in advance from April 12 to 20, between 10 a.m. and midnight.

Drawing on traditional recipes from Europe, the Middle East, Asia, and the Americas, dishes will include sous-vide Kneidalaj soup, gefiltefish, creamed herring, and trout lox, as well as hummus, babaganoush, apple tzatziki, and tabbouleh. 

There will also be falafel and kippe frit, pastrami, matzo and meat moussaka with tahini béchamel, smoked chicken ras al hanout, lentils with raisins and herbs, matzo farfalach, and tahini potato gratin. 

Sides and sundries will include jrein sauce, aged mustard, and apple charoset. Kosher wine for the kisdush blessing will be available to accompany these dishes.

Desserts include passion fruit and chocolate mousse, matzo dipped in chocolate and nuts, leikach with matzo meal and date syrup, and dates stuffed with almond paste and strawberries.

Rotisería Mishiguene will also offer set menus for four.
